3 jumbo eggs
100ml milk
100ml cream
1 tbsp NOMU Sweet Rub
8 slices white bread
100g NOMU Organic Dark Baking Chocolate, roughly chopped
40g butter
Extra NOMU Sweet Rub for serving
Sauce:
150ml maple syrup
100ml orange juice
To make the sauce, place the maple syrup and orange juice in a small heavy-based saucepan and caramelize together until thick and syrupy. Set aside to cool.
Gently melt the chocolate over a bain marine or in the microwave and set aside to cool until thickened but still spreadable.
For the French toast, whisk the eggs, milk, cream and NOMU Sweet Rub together in a medium-sized mixing bowl. Spread one side of a bread slice with a generous layer of melted chocolate and then dip into the egg mixture.
Soak another slice of bread in the egg mixture, place on top of the chocolate and press down gently.
Heat half the butter in a large non-stick heavy-based frying pan and place the prepared bread in the pan. Cook for 3 minutes on each side until golden in colour. Remove from the pan, slice into fingers and serve immediately with an extra sprinkling of NOMU Sweet Rub and a generous drizzle of burnt orange sauce.
Tip: You can also fill your French toast with your favourite spread, like pistachio nut butter, Nutella or Biscoff.
