500g good quality plain feta cheese
Zest of 2 lemons
2 tbsp NOMU Provençal Rub
100g caperberries
Good grind ofNOMU Black Pepper
1 cup (250ml) NOMU Extra Virgin Olive Oil
Cut the feta into 2cm cubes. Place in a mixing bowl with the lemon zest, Provençal Rub, caperberries and Black Pepper. Gently toss to coat, then cover with the Olive Oil.
For best results, marinate the feta overnight before using. This is so good either as part of a mezze or antipasti platter together with some really good bread and olives of course! Also a fantastic addition to salads, pasta and chicken dishes.
Tip: Makes enough feta to fill a 500ml glass jar.
