NOMU Extra Virgin Olive Oil for frying
1 clove of garlic, chopped
1 shallot onion, chopped
2 tins of chickpeas, drained and rinsed
¼ cucumber, thickly sliced
A handful of diced parsley
50g fresh coriander
1 avocado, sliced
100g feta, chopped
NOMU Black Pepper and Sea Salt to taste
Heat NOMU Extra Virgin Olive Oil in a medium sized pan, on a medium-high heat. Sauté the garlic and shallot until soft.
Drain chickpeas, and add to the sauté pan, to just heat them through.
Add cucumber pieces, as well as the parsley, coriander, avocado and feta.
Season to taste.
