NOMU Extra Virgin Olive Oil, for frying
1 clove garlic, finely chopped
1 shallot onion, peeled and chopped
2 tins of chickpeas, drained and rinsed
¼ cucumber, thickly sliced
A handful of diced parsley
50g fresh coriander
1 avocado, sliced
100g feta, chopped (optional)
NOMU Black Pepper and Sea Salt, to taste
Heat a glug of NOMU Extra Virgin Olive Oil in a medium sized frying pan over medium-high heat. Sauté the garlic and shallot until soft.
Drain chickpeas and add to the pan, to just heat them through.
Arrange the warm chickpeas, cucumber, parsley, coriander, avocado and feta on a serving platter and season to taste.
