TAPAS-STYLE PORK RIBS

Servings: 8 tapas servings

Ingredients

1 kg baby pork ribs (tapas size)
1/4 cup (60 ml) NOMU Extra Virgin Olive Oil
Juice from half an orange
1/4 cup (60 ml) honey (slightly heated to make it runny)
2 tbsp NOMU Roast Rub or Spanish Rub
1 tsp Spanish paprika or NOMU Smoked Sweet Paprika
NOMU Sea Salt and Black Pepper Grinder

Directions

Combine the Olive Oil, orange juice, honey and spices.

Place the ribs in a roasting tray and rub all over with the marinade. If possible, marinate for 4 hours.

Preheat the oven to 180ºC.

Place the ribs in a baking dish and cover with foil. Cook for approximately 45 minutes until tender. Remove the foil and cook further until the ribs are browned and caramelized. Throughout the cooking process, you can baste with reserved marinade. The stickier the ribs, the better!
