GRILLED PINEAPPLE DESSERT

Ingredients

1 queen pineapple
1 tsp NOMU Ground Cinnamon
3 pumps NOMU Vanilla Bean Paste
½ cup brown sugar
½ cup rum / brandy or sherry
Mint to garnish
Vanilla ice cream to serve

Directions

Combine the sugar, rum, cinnamon and vanilla in a saucepan on medium heat/ allow to simmer for around 5-8 minutes or until the caramel has thickened. Remove from the heat and allow to cool slightly and thicken. Transfer to a small jug.
While the caramel is reducing, prepare your pineapple by removing the skin and the core and cutting it into either wedges or rings.

Prepare a griddle pan by spraying with non-stick spray and place it on medium heat.

Grill the pineapple wedges for 1-2 minutes a side, or until slightly charred. While grilling, baste with some of the caramel sauce.

Plate the pineapple up on your serving plates, top with vanilla ice cream, a generous glug of caramel and some mint leaves.
