Snickerdoodle cookies
Have you ever thought about how bizarre the name ‘snickerdoodle’ is? Snicker. Doodle. Pfft, it’s so silly. But we reckon their deliciousness is a good enough reason to take these cinnamon-sugar cookies seriously.

Snickerdoodle cookies

Makes: 12 cookies

Ingredients

1 box NOMU minimakes Vanilla Cookie Dough Mix
60g unsalted butter, melted and cooled
1 large egg

Cinnamon sugar:
3 tbsp castor sugar
 
1 tbsp NOMU ground cinnamon 

Directions

Preheat your oven to 160°C (fan-assisted convection) and line two trays with baking paper.

Whisk together the butter and sugar (sachet 1), then whisk in the egg until well combined. Add the cookie mix (sachet 2) and stir to form a soft dough.

Portion and roll the dough into 12 even balls. Mix the castor sugar and ground cinnamon together and roll each ball in the mixture, ensuring you coat the outside of each one very well.

Place the cookies about 5cm apart on the prepared baking trays and lightly press flat until about 1cm thick. If the cinnamon-sugar coating looks a little thin after pressing the cookies, sprinkle a bit of the leftover mixture on top of each cookie.

Bake for 10-12 minutes until lightly golden and allow to cool.

Tip: Press cookies together with cinnamon buttercream to make delicious cookie sandwiches.
