Sausage & potato bake
A one-pan, weeknight warrior that the whole family will enjoy! Feel free to swap out the pork bangers for any of your favourite sausages.

Sausage & potato bake

Servings: 6

Ingredients

12 baby Mediterranean potatoes
4 shallots
6 cloves garlic, skin left on
Glug NOMU Extra Virgin Olive Oil
1 tsp NOMU One For All Rub
Handful fresh sage
Handful fresh thyme
12 pork sausages, halved diagonally
NOMU Sea Salt and NOMU Black Pepper

Directions

Preheat the oven to 180°C.

Leaving the skin on, slice the potatoes in half lengthwise and place in an ovenproof baking dish. Add the peeled and quartered shallots as well
as the garlic cloves which have been lightly smashed with the flat of a knife. Generously drizzle with Olive Oil and toss well to coat. Sprinkle the NOMU One for All over the vegetables, season with Sea Salt and mix through thoroughly.

Place the dish in the oven for 20 minutes. Add the herbs and the sausage pieces and return the dish to the oven for another 20 minutes or until the sausages are cooked through and browned. The shallots and potatoes should also be golden and caramelized.

Serve hot with freshly baked bread.

 

Tip: Feel free to swap out the pork sausages for other types, like beef or chicken.
