60g unsalted butter, melted
2 large eggs
1/3 cup smooth peanut butter
2 tbsp peanuts, finely chopped
Preheat the oven to 160°C (fan-assisted convection) and generously grease a 24-hole mini muffin tray with non-stick spray.
Whisk the melted butter with the sugar (sachet 1), then whisk in the eggs one at a time until well combined. Add the brownie mix (sachet 2) and stir to form a glossy batter.
Half-fill 20 muffin cups with brownie batter, then dollop a small teaspoon of peanut butter in the centre of each. Cover with the remaining brownie batter and sprinkle the chopped peanuts on top.
Bake the brownie bites for 10-12 minutes until cooked but still gooey inside. Allow to cool before serving.
