MOROCCAN CHICKEN SKEWERS

Ingredients

500g chicken breast, cubed
2 tbsp NOMU Moroccan Rub
2 tbsp olive oil
1 red onion, cut into wedges
Fresh coriander for garnish
Juice and rind of 1 lemon
Lemon wedges for serving
Hummus for serving
Parsley for serving

Directions

  1. In a bowl, combine the chicken cubes, NOMU Moroccan Rub, and olive oil. Mix well to coat the chicken evenly. Marinate for at least 30 minutes.
  2. Thread the marinated chicken onto skewers, alternating with red onion wedges and bell pepper squares.
    Preheat your braai or pan to medium-high heat.
  3. Place the skewers on the grill (or a pan with some olive oil) and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
  4. Remove the skewers from the grill and let them rest for a few minutes.
  5. Garnish with fresh parsley and serve with lemon wedges and hummus on the side. Enjoy!
