4 cups large flake oats (ideally gluten-free if you have)
2 cups of your favourite raw, unsalted nuts (pecan, walnuts, almonds, pistachios or cashews)
½ cup sunflower seeds
½ cup pumpkin seeds
½ cup coconut oil (or vegetable oil)
½ cup honey
2 pumps NOMU Vanilla Paste (optional)
1 tsp NOMU Cooks Collection Ground Cinnamon
Pinch of salt
2 cups of your favourite dried fruit such as cranberries, raisins, dates, peaches, apricots or mango
To make the muesli, preheat the oven to 180°C.
In a large bowl, combine the oats, nuts and seeds and toss to combine.
Place the coconut oil and honey in a saucepan and heat through to melt. Stir in the vanilla, salt and cinnamon. Drizzle over the dry ingredients and mix well to ensure the dry ingredients are evenly coated in the syrup.
Place the pan in the oven and bake for 25 – 30 minutes, stirring from time to time to ensure even cooking, until toasted and golden. Remove from the oven and set aside to cool. Once cooled, add the dried fruit and mix to combine.
To make the apples, place the butter, sugar and the NOMU Sweet Rub or Ground Cinnamon in a heavy based pan over medium heat. Allow the butter to melt and stir the sugar to dissolve. Add the honey and stir again. Once the sugar is dissolved and sticky, add the pieces of apple and allow them to soften and caramelize in the sugar mixture. Serve the granola with a big dollop of Greek yoghurt and caramelized apple wedges.
Tip:
Coconut flakes are also a delicious ingredient to add to the dry ingredients before roasting. If the coconut is already toasted, add at the end.
Maple syrup is also delicious instead of honey.
Store granola in an airtight container.
