1 cup light brown sugar
3 tsp Hot English mustard powder
1 cup maple syrup
Zest and juice of 2 oranges
1 tbsp NOMU Roast Rub

2 cinnamon sticks
5 whole peppercorns from your NOMU Black Pepper Grinder
2 fresh bay leaves
Place the sugar, mustard powder, maple syrup and orange juice in a pot on the stove, stirring to combine. Slowly bring the mixture to a boil, stirring to dissolve the sugar. Add the orange zest, NOMU Roast Rub, cloves, star anise, cinnamon sticks, peppercorns and bay leaves and stir to combine.
Simmer gently for 1-2 minutes, then allow to cool or decant while hot into a clean, clear jar of your choice.
