250g brown and wild rice
250g dried figs
1 cup fresh parsley
½ cup Egyptian dukkah
4 tbsp NOMU Extra Virgin Olive Oil
100g dried cranberries
Zest of 1 orange
Zest of 1 lemon
Juice of ½ lemon
Juice of ½ orange
NOMU Sea Salt and NOMU Black Pepper
Cook the rice according to the packaging directions – take care not to overcook it. Once cooked, rinse under cold water and allow to cool.
Thinly slice the dried figs and roughly chop the parsley.
In a large bowl, combine the rice, figs, parsley, dukkah, Olive Oil, dried cranberries, zest and juice of orange and lemon. Season with NOMU Sea Salt and Black Pepper and toss well to combine all the flavours. Spoon into a gorgeous bowl to serve.
Tip: You can use any sort of grain, like couscous, tabouleh or quinoa, and you can substitute the dried fruits with apricots and raisins if figs or cranberries are not available
