TORTILLA DE PATATAS

Ingredients

1 kg potatoes, weighed before peeling
150 ml mild olive oil
1 onion, diced
2 cloves garlic, chopped very fine
6 eggs
250 ml milk (optional)
2 tsp NOMU One for All Rub
NOMU Sea Salt and Black Pepper Grinder

Directions

Peel and slice the potatoes into fairly chunky cubes or slices. Heat the olive oil in a heavy-based non-stick pan, and add the onion, potatoes and
garlic. Lower the heat and cook, turning occasionally, until tender and beginning to brown slightly on the bottom. (The potatoes should be covered in oil.) Remove from the stove and strain really well.

In a large bowl, whisk the eggs, milk, NOMU One for All, Sea Salt and Black Pepper. Add the potato mixture and stir until combined.

Put 1-2 tbsp of the olive oil back into the pan and add the potato mixture. Lower the heat and allow to set and brown on one side before turning with the help of a lid or a plate. Continue turning until the tortilla is just set and both sides are browned to your liking.

Turn out onto a plate and serve hot, warm or even cold in tapas sizes or as a meal with a salad and some crusty bread!
