Small batch vegan pancakes
A delicious base for all of your favourite toppings, like banana, nut butter, fresh berries, maple syrup or yoghurt.

Small batch vegan pancakes

Makes: 8 pancakes

Ingredients

1 x 150g sachet NOMU MiniMakes All Purpose Dough & Batter Mix
3/4 cup (180ml) dairy-free milk (we used soy)
1 1/2 tsp apple cider vinegar or white grape vinegar
2 tbsp vegetable oil, plus extra for frying

Directions

Whisk together the vegan milk and vinegar in a mixing bowl until combined. Leave for 5 minutes, then whisk in the oil. Dump in the contents of the dry mix sachet and stir until just combined. Do not overmix! The batter should still look a little lumpy, but there mustn’t be any streaks of dry flour.

Heat a non-stick frying pan over medium-high heat and lightly grease with a little oil or non-stick spray. Dollop 1/4 cup portions of batter into the hot frying pan and cook until bubbles appear on the surface and the underside is golden. Flip over and cook until golden and cooked through. Repeat until all the batter is finished.

Serve with any of your favourite toppings, like syrup, bananas, caramelised apples, berries, yoghurt or ice cream.
