Oven-roasted plum confit
This can be made with any combo of your favourite stone fruit. Delicious served with scoops of vanilla bean ice cream, or spooned on top of a gooey wheel of brie for a stunning starter.

Oven-roasted plum confit

Ingredients

10 plums
¼ cup caster sugar
1 tsp NOMU Sweet Rub
5 pumps (5ml) NOMU Vanilla Paste
3 tbsp brandy
Juice of 1 orange
1 cinnamon stick
1 NOMU Cook’s Collection Star Anise (optional)
1 vanilla pod (optional)

Directions

Preheat your oven to 200°C.

Halve 5 of the plums and remove the pips. Place the halved and remaining whole plums in a roasting dish.

Sprinkle with sugar and NOMU Sweet Rub. Stir the NOMU Vanilla Paste into the brandy and drizzle over the plums along with the orange juice. Toss in the cinnamon stick, NOMU Cook’s Collection Star Anise and split vanilla pod if you have and roast for 20 – 30 minutes until lightly browned and syrupy. You’ll love the smells coming out of your oven!

Serve warm, or allow to cool.

 

Tips: You can serve this plum confit on top of a wheel of brie or with any of your favourite cheeses. It is also a delicious dessert served with a dollop of sweetened vanilla cream or vanilla ice cream. Kids love it!

You can substitute the plums for any stone fruit such as peaches, nectarines or apricots.
