MINTED BREAD PESTO
This pesto is delicious spooned on top of lamb, fish or chicken! A tasty way to use up stale day-old ciabatta or country bread.

MINTED BREAD PESTO

Servings: 6

Ingredients

1 clove garlic, finely chopped
1 shallot, finely chopped
1 small green chilli, finely chopped
1 tbsp NOMU One For All Rub
NOMU Sea Salt and Black Pepper
250ml breadcrumbs from a stale day-old ciabatta or country loaf (see Tips)
15g fresh mint, finely chopped
2 tbsp NOMU Extra Virgin Olive Oil
1 tbsp red wine vinegar
1 tsp sugar

Directions

Place the garlic, shallot, chilli, NOMU One For All Rub and a pinch of salt and pepper in a pestle & mortar and grind to a coarse paste. Toss through the breadcrumbs and mint and then add the Olive Oil, red wine vinegar and sugar to taste.

Spoon on top of chicken, lamb or fish!

Tip: Do not use white sandwich bread for this recipe as the crumbs will simply dissolve.

Be sure to chop all the ingredients and use it the same day as the pesto will not keep for too long.
