MEXICAN BREAKFAST BURRITO

Ingredients

Avocado Salsa:
1 clove garlic, crushed
1 red onion, finely chopped
1 jalapeno chilli, deseeded and chopped
1 handful of fresh coriander, roughly chopped
Zest and juice of 1 lime

Refried Beans:
1 tbsp bacon fat or 1 tbsp NOMU Extra Virgin Olive Oil
1 clove garlic, crushed
1 red onion, finely diced
2 cans of speckled sugar beans
¼ tsp NOMU Ground Cumin
NOMU Spicy Chilli Grinder
2 ripe but firm avocados, finely diced
15 rosa tomatoes (or 2 large ripe roma tomatoes)
NOMU Sea Salt
NOMU Black Pepper

4 corn or flour tortillas
4 – 8 eggs
Grated cheddar cheese to serve

Directions

To make the avocado salsa, mix the garlic, red onion, jalapeno chilli, coriander, lime zest, lime juice and a few grindings of NOMU Spicy Chilli Grinder in a medium bowl. Add the avocado and tomatoes and season with NOMU Sea Salt and NOMU Black Pepper to taste. Gently mix without allowing the avocado to disintegrate. Set aside.

To prepare your refried beans, sauté the garlic and onion in NOMU Extra Virgin Olive Oil, until translucent. Add the beans and stir using a wooden spoon until the beans heat through and start to resemble a coarse paste. Add the NOMU Ground Cumin and salt and pepper to taste. Set aside.

Cook your eggs to your preferences and serve in a warmed tortilla with your refried beans and a generous spoonful of fresh avocado salsa. Top with a sprinkle of strong cheddar cheese and a squeeze of fresh lime then roll it up and enjoy!
