MEXICAN BREAKFAST BURRITO

Ingredients

AVO SALSA:
1 clove garlic, crushed
1 red onion, finely chopped
1 jalapeno chilli, deseeded and chopped
1 handful fresh coriander, roughly chopped
Zest and juice of 1 lime
NOMU Spicy Chilli Grinder
2 ripe but firm avocados, finely diced
15 rosa tomatoes (or 2 large ripe Roma tomatoes)
NOMU Sea Salt
NOMU Black Pepper

REFRIED BEANS:
1 tbsp NOMU Extra Virgin Olive Oil
1 clove garlic, crushed
1 red onion, finely diced
2 cans speckled sugar beans
¼ tsp NOMU Ground Cumin

TO SERVE:
4 – 8 eggs
4 corn or flour tortillas
Grated cheddar cheese

Directions

To make the avocado salsa, mix the garlic, onion, jalapeno, zest and juice with a few grindings of NOMU Spicy Chilli Grinder in a bowl. Add the avocado and tomatoes and season with salt and pepper to taste. Gently mix without allowing the avocado to disintegrate. Set aside.

To prepare the refried beans, sauté the garlic and onion in Olive Oil until translucent. Add the beans and stir using a wooden spoon until the beans heat through and start to resemble a coarse paste. Add the Ground Cumin and season with salt and pepper to taste. Set aside.

Cook your eggs to your preferences and serve in a warmed tortilla with the refried beans and a generous spoonful of fresh avocado salsa. Top with a sprinkle of strong cheddar cheese and a squeeze of fresh lime, then roll it up and enjoy!
