1 small purple cabbage
1 small green cabbage
1 apple
Juice of 1 lemon
¼ cup sultanas
1 red onion, thinly sliced
Large handful of Italian parsley, chopped
½ cup NOMU MAYU
NOMU Sea Salt and NOMU Black Pepper
Thinly slice or shred the cabbages and place in a large bowl.
Peel and grate the apple and immediately cover with lemon juice to prevent browning.
Add to the cabbage along with the sultanas, red onion and Italian parlsey. Add the NOMU MAYU and mix well. Season to taste with NOMU Sea Salt and Black Pepper and refrigerate until required.
Tips: NOMU MAYU is a non-tangy mayonnaise – feel free to add an extra squeeze of lemon juice for some extra punch.
