1 x 150g sachet NOMU MiniMakes All Purpose Dough & Batter Mix
1 large egg
1 cup (250ml) milk or buttermilk, room temperature
2 tbsp (30g) butter, melted
100g grated cheddar cheese
10g chives, finely chopped
Whisk together the egg, milk and melted butter in a jug until combined. Tip the dry mix into a mixing bowl and slowly whisk in the wet ingredients until batter starts to form. Do not overmix the batter! It’s okay if there are still a few lumps in the mixture. Add the cheese and chives and gently fold in.
Set the batter aside to rest for 10 minutes while you set up and preheat your waffle maker.
Once hot, lightly grease your waffle maker with non-stick spray and dollop in 1/4 cup measures of batter (or according to the manufacturer’s instructions). Cook until golden and crisp and keep warm in the oven until ready to serve.
Serve with any of your favourite toppings like poached eggs, bacon, fresh tomatoes, sliced avo, feta, goat’s cheese or parma ham.
