Blondie cookies
Blondie cookies (blookies?) are made by dropping scoops of blondie batter on a tray and baking it like you would cookies. A delightful twist on a beloved favourite, this method saves you a lot of time when you feel like blondies but don’t have a lot of time to spare.

Blondie cookies

Makes: 12 cookies

Ingredients

1 box NOMU minimakes Vanilla Blondie Batter Mix
1 large egg
30g unsalted butter, melted 
40g white chocolate, melted

 

Directions

Preheat the oven to 160ºC (fan-assisted convection) and line a tray with baking paper.

Whisk together the egg and sugar (sachet 1) for 1 minute until pale and creamy, then gently stir in the melted butter and chocolate until well combined. Add the blondie mix (sachet 2) and stir to form a thick batter.

Use a 1 tbsp measuring spoon or small cookie scoop to portion the dough and roll into balls. If the batter is too sticky to work with, cover and chill in the fridge for 10 minutes.

Space the dough balls 5cm apart on the prepared baking tray and bake for about 10 minutes until cooked on the outside, but still fudgy in the center.

Allow to cool on the tray before transferring to a wire rack to cool.

Tip: The addition of melted chocolate makes these blondie cookies extra fudgy in the center.
