Cheddar and Bacon Melt

4 slices bacon
4 slices country or sourdough bread
200 g mature cheddar, grated
2 tbsp basil pesto 
2 tbsp boiling water
1 tbsp Extra Virgin Olive Oil
NOMU Sea Salt
NOMU Black Pepper


Preheat the top grill of the oven. 

Fry the bacon in a pan or grill it in the oven until super crispy.

Place the bread on a baking tray and grill one side until nicely browned.  Remove from the oven, turn the bread over and spread the untoasted side generously with pesto.

Place the bacon on top, followed by a generous handful of cheese and grill in the oven until the cheese is golden and bubbling.  Season with freshly ground NOMU Sea Salt and NOMU Black Pepper and tuck in.

TIP.  Serve with grilled cherry tomatoes on the vine.
