Cheddar & Bacon Melt

Ingredients

4 slices bacon
4 slices sourdough bread (or any bread of your choice)
200g mature cheddar, grated
2 tbsp basil pesto 
2 tbsp boiling water
1 tbsp NOMU Extra Virgin Olive Oil
NOMU Sea Salt and Black Pepper

Directions

Preheat the top grill of the oven. 

Fry the bacon in a pan or grill it in the oven until super crispy.

Place the bread on a baking tray and grill one side until nicely browned.  Remove from the oven, turn the bread over and spread the untoasted side generously with pesto. 

Place the bacon on top, followed by a generous handful of cheese and grill in the oven until the cheese is golden and bubbling. Season with freshly ground Sea Salt and Black Pepper and tuck in.

Tip: Serve the cheddar melts with grilled cherry tomatoes on the vine.
