Brookies (aka brownie cookie slices)
Brownies or cookies, brownies or cookies? When you can’t figure out your sweet tooth, why not bake both. Introducing brookies: fudgy chocolate brownies topped with a layer of crunchy golden vanilla cookie. These bars bring together the best of two beloved classics.

Brookies (aka brownie cookie slices)

Makes: 16 brookies

Ingredients

Brownie:
1 box NOMU minimakes Chocolate Brownie Batter Mix
60g unsalted butter, melted 
2 large eggs

Vanilla cookie:
1 box NOMU minimakes Vanilla Cookie Dough Mix
1 large egg
60g unsalted butter, melted and cooled
50g chocolate chips

Directions

Preheat the oven to 160°C (fan-assisted convection). Grease and line a 20cm square tin with baking paper.

To make the brownie batter, whisk the sugar (sachet 1) and butter until combined, then whisk in the eggs one at a time until pale and creamy. Add the brownie mix (sachet 2) and stir to form a smooth glossy batter. Spread the batter evenly into the prepared tin and set aside while you prepare the cookie dough.

For the vanilla cookie dough, whisk the sugar (sachet 1) with the melted butter, then whisk in the egg until combined. Add the cookie mix (sachet 2) and chocolate chips and stir to form a soft dough.

Dot chunks of cookie dough evenly on top of the brownie batter until all the dough is used up and the entire surface of the brownie is covered.

Bake for 25-30 minutes or until the cookie dough is crunchy and golden and the brownie is cooked through but still fudgy in the center. Allow to cool completely before slicing.

Tip: These brookies are also delicious made with NOMU minimakes Chocolate Cookie Dough Mix.
