AVOCADO & WALNUT SALAD WITH HONEY MUSTARD VINAIGRETTE

Makes: 1 loaf cake

Metric Imperial

Ingredients

DRESSING:
2 tbsp honey
1 tbsp French mustard
1 clove garlic, peeled and crushed
60ml apple cider vinegar
2 tsp balsamic vinegar
½ tsp NOMU One for All Rub
90ml sunflower oil
90ml NOMU Extra Virgin Olive Oil
NOMU Sea Salt and NOMU Black Pepper, to taste

SALAD:
1 avocado, peeled and sliced
2 discs feta cheese, crumbled
Handful cherry tomatoes, cut in half
50g walnuts, lightly toasted and chopped

Directions

Place the honey, mustard, garlic, vinegars and NOMU One for All in a blender or food processor and mix together. Pour the oils slowly through the funnel with the motor still running. Season to taste.

Place all of the salad ingredients in a bowl and toss gently with the dressing just before serving.
