Juice and zest of 1 orange
25ml rum (optional)
160ml honey
70ml brown sugar
20ml wholegrain mustard
20ml Dijon mustard
60ml soy sauce
1 tsp (5 ml) NOMU Roast Rub
Place all the ingredients in a small saucepan. Slowly simmer, stirring occasionally, until the glaze has reduced by a third. The glaze should be thickened slightly and all sugar dissolved. Take off the heat and leave to cool.
