Apple crumble
Who can resist the combination of apple and cinnamon? This is comfort food at its best!

Apple crumble

Makes: 6 small or 1 large crumble

Ingredients

6 large tart apples
50g butter
100g caster sugar
1 tbsp NOMU Sweet Rub
1 whole cinnamon stick (optional)

CRUMBLE:
120g cake flour, sieved
60g caster sugar
60g unsalted butter, cubed and chilled
NOMU Sweet Rub, to dust

Directions

Preheat the oven to 200°C.

Peel and core the apples and cut into bite-size chunks. In a heavy-based saucepan, melt the butter over medium heat. Stir in the sugar, NOMU Sweet Rub and cinnamon stick. Add the apple chunks, stirring to coat in the sugar mixture, and saute for about 5 minutes. The apples should have slightly softened, but still retain their shape. Remove the saucepan from the heat and place the apples and any juices in a clean bowl to cool.

In a mixing bowl or food processor, combine the flour and sugar. Add the chilled butter and either rub into the flour with your fingertips or pulse in a processor until all the butter has been combined with the flour and a fine crumble has formed.

Spoon the apples and juices into 6 small or 1 large baking dish until they are filled to just below the rim. Sprinkle a generous layer of the crumble over the apples and then sprinkle a little NOMU Sweet Rub over the top. Place onto a foil-lined baking tray to catch any juices during cooking and bake for 15-25 minutes, or until the crumble is golden and crispy.

Remove from the oven and serve immediately with a generous dollop of double thick cream, homemade vanilla ice cream or custard.

Tips: Add a handful of fresh blackberries to the cooled apple filling for delicious bursts of sweetness.
