750ml sparkling white wine
1 cup caster sugar
2 pumps NOMU Vanilla Paste
2 cinnamon sticks
12 ripe but firm peaches
Place the wine, sugar, Vanilla Paste and cinnamon sticks in a medium saucepan and slowly bring to a boil. Stir every now and then to help the sugar dissolve. Simmer the poaching syrup for around 5 mintues, then add in the peaches and simmer for another 10 – 15 minutes or until the fruit feels soft when pierced with a small sharp knife.
Remove the fruit from the heat and serve warm or chilled, drizzling each serving with some of the delicious poaching syrup.
Tips: If you want to peel the peaches before serving them, cut a shallow 2cm cross in the base of each peach before poaching them. Poach as per the recipe above, then allow to cool before carefully peeling them to serve.
Place the hot poached fruit and syrup into beautiful sterilized jars to gift as thoughtful gifts.
