1 NOMU Scone and Cobbler Kit
125g unsalted butter, cubed
1 large egg
250ml buttermilk
800g fresh seasonal berries
15ml cake flour
3-4 tbsp caster sugar
Whipped cream, to serve
Preheat your oven to 180°C and lightly grease a 25cm pie dish.
In a mixing bowl, rub the butter into the Scone Mix using your fingertips until it resembles coarse breadcrumbs or simply whizz it up in a food processor.
Lightly whisk the egg and buttermilk together in a jug. Using a knife, cut the liquid into your flour mixture to form a very soft dough. It should be quite wet and gooey. Place the berries in a bowl, add the caster sugar and flour and toss well to coat.
Place the berries in the pie dish and spoon dollops of the cobbler dough on top. Lightly brush with milk, sprinkle generously with caster sugar and bake for 35-40 minutes or until golden brown and cooked through.
Serve warm with freshly whipped cream.
Tip: If peaches are in season, they will be a delicious addition or alternative to the berries!
