10 bone-in chicken pieces (thighs & drumsticks)
NOMU Sea Salt and Black Pepper
NOMU Extra Virgin Olive Oil, for frying
8 cloves garlic, crushed
1 tbsp NOMU BBQ Rub
2 tbsp soy sauce
2 tbsp maple syrup
1 lemon, sliced
1/2 cup (125ml) hot water
Season the chicken pieces with Sea Salt and Balck Pepper.
Heat a glug of Olive Oil in a large frying pan over high heat and sear the chicken pieces in batches until browned all over. Once all the chicken is golden brown, place all the pieces back into the pan with the garlic and NOMU BBQ Rub. Mix really well over medium heat, making sure the chicken is nicely coated in all the spices. If the chicken starts to burn, reduce the heat.
Add the soy sauce, maple syrup, lemon sliced and hot water to the pan. Allow the liquid to simmer away until it has reduced by half and become quite sticky. This will take about 20 minutes, in which time the chicken will be cooked through.
Serve at room temperature with lots of napkins!
