6 medium zucchini
2 yellow nectarines
2 white nectarines
Handful of baby parsley sprigs
8 slices prosciutto
DRESSING:
¼ cup NOMU Extra Virgin Olive Oil
Zest and juice of 1 lemon
Small handful chopped mint
1 small red chilli, finely diced and de-seeded

Using a vegetable peeler or mandolin, shave the zucchini into thin strips and place in a salad bowl or platter. Cut the nectarines into quarters and add them to the zucchini shavings along with the parsley and prosciutto.
To make the dressing, combine the Olive Oil, lemon zest and juice, mint and chilli and season with Sea Salt and Rainbow Pepper. Pour the dressing over the salad, toss to coat the ingredients and serve.
Tip: For extra heat, add the seeds of the chilli to the dressing.
