These are great for kids in Summer around the pool. You definitely don’t want them eaten indoors! There are many ways to make ice lollies, but here are our 3 favourites.
One:
Simply pour your favourite fruit juice into ice lolly moulds and freeze.
Two:
Take a bag of frozen berries and pour in a saucepan. Add 30ml of water and a tablespoon or two of sugar (depending how sweet you want it) and allow to simmer over a gently heat until the fruit has softened. Using a wooden spoon, press down on the berries so that they release their juices. Once the mixture has cooked down, strain the berries and reserve the juice. Add some store-bought berry juice to the berry cordial and stir. Pour into ice lolly moulds and place in the freezer to set.
Three:
Using an electric juicer make fresh fruit juice of your choice, adding sugar to taste. Stir to dissolve and, if necessary, add a little apple or grape juice. Pour into ice lolly moulds and place in the freezer to set.
Tip: If you would like to give an authentic lolly look, use wooden sucker sticks, available at most craft or packaging shops. All you do is pour your juice into the ice lolly moulds and place in the freezer without any cap or lid. Allow to just set, so that the mixture is icy but not frozen. Slip your lolly sticks through the ice, making sure that they are straight and allow the crushed ice that has formed to hold them up!
