PIZZA BASE:
1 cup self-raising flour
1 cup wholewheat flour
1 tsp instant yeast
Pinch of NOMU Sea Salt
1 cup tepid water
TOPPING:
1/3 cup (80ml) tomato paste
2 tsp NOMU Dried Oregano Leaves
1 tbsp NOMU Extra Virgin Olive Oil
1 cup mozzarella, grated
4 slices country ham, sliced
1/3 cup cherry tomatoes, halved

1 ripe avocado, sliced
a handful of fresh rocket
Sieve the flours, instant yeast and salt onto a clean work surface and make a well in the middle. Using a small jug, gently pour the water into the well. Using a fork, gradually work the flour in from the sides and combine with the liquid until it all comes together. Dust your hands with flour and knead until you have a smooth, springy dough.
Lightly grease a large bowl with Olive Oil and place the dough inside. Cover with a damp tea towel and leave in a warm place to rise until doubled in size (about 1 hour).
Preheat the oven to 200°C.
In a small bowl, mix together the tomato paste, oregano and Olive Oil until combined. Set aside. Grate the mozzarella and prepare the rest of the toppings.
On a floured surface, slice the ball of dough in half and roll out using a rolling pin into two small pizzas. Place on a greased baking tray and spread the tomato mix all over the base. Layer with the mozzarella, banana, country ham and cherry tomatoes. Season with a good grinding of NOMU One for All and place in the oven for 20 minutes or until the cheese is melted.
Remove from the oven and garnish with the sliced avocado and fresh rocket.
