Chocolate banana muffins
The love-child of tender banana bread and fluffy chocolate muffins, with some chocolate chips thrown in for good measure.

Chocolate banana muffins

Makes: 8 muffins

Metric Imperial

Ingredients

1 box NOMU MiniMakes Chocolate Cake Batter Mix
2 large eggs
80g unsalted butter, melted and cooled
½ cup plain full cream yoghurt
1 medium banana, mashed (about 90-100g)
50g milk chocolate, chopped

Directions

Preheat your oven to 170°C and line a muffin tin with 8 muffin cases.

Whisk the eggs until frothy, then mix in the melted butter, yoghurt and banana until combined. Add the cake mix and most of the chocolate and whisk to form a smooth batter.

Divide the batter evenly between the muffin cases and scatter the remaining chocolate chips on top. Bake for 25-30 minutes or until cooked when tested with a skewer.

Allow to cool in the tin for 10 minutes before transferring to a wire cooling rack to cool.

Tip: Overripe bananas are best for baking as they are sweeter and have a far better flavour.
