2 ripe avocados
1/2 cup diced seeded tomatoes
1/2 cup finely diced red onions
3 tbsp chopped coriander
Juice of 2 limes

Scoop the avocado flesh into a mixing bow and mash lightly with a fork. Add the rest of the ingredients and stir gently. Season with salt and pepper and a few pinches of NOMU Cajun Rub or some finely diced chilli for some extra kick.
