BEEF & SHITAKE MUSHROOM STIRFRY

Ingredients

BEEF:
500g beef sirloin
1 tbsp rice wine vinegar
1 tbsp cornflour
1/2 tsp sesame oil
Vegetable oil, for deep frying

STIRFRY:
1 shallot, finely diced
1 tsp grated ginger
1 tsp chopped garlic
1 tsp very finely chopped lemongrass
1 tbsp NOMU Oriental Rub 
1 red pepper, seeded and sliced
200g shiitake mushrooms
10 stems long-stemmed broccoli
1/4 cup soy sauce
A small glug of oyster sauce
1/2 cup prepared NOMU Beef Stock
1 tsp cornflour combined with 2 tbsp cold water and 1/2 tsp sugar
1 cup sliced spring onions
Egg noodles, cooked

Directions

Cook your egg noodles according to package directions. Drain and set aside.

In a bowl, combine the beef, rice wine vinegar, cornflour and sesame oil. Deep fry for 1 minute, then transfer to a colander placed over a bowl to drain any excess oil.

Add a glug of fresh oil to a wok and, working quickly and vigorously, fry the shallot, ginger, garlic, lemongrass and NOMU Oriental Rub for 1-2 minutes. Add the red pepper, mushrooms and broccoli and stir fry for 3 minutes. Stir in the soy sauce and oyster sauce, followed by the prepared NOMU Beef Stock and cornflour mixture. Lastly add the spring onions, noodles and beef. Stir fry until everything is heated through and thoroughly coated in sauce.
