150g butter, softened
150g sugar
2 eggs
180g flour
1 tsp bicarbonate of soda
½ tsp baking powder
1 tsp NOMU Sweet Rub
Pinch of NOMU Sea Salt
400g / 2 apples, peeled, cored and coarsely grated
60g walnuts, lightly toasted and roughly chopped
5 pumps NOMU Vanilla Paste
TOPPING:
60g walnuts, finely chopped
60g NOMU Sweet Rub
Preheat your oven to 180°C. Butter and flour a 30 x 11cm loaf tin .
Cream the butter and sugar together until fluffy and creamy. Add the eggs and beat together well. Sift the flour, bicarbonate of soda, baking powder, NOMU Sweet Rub and salt into the butter mixture and mix well to form a thick batter. Add the apples, walnuts and Vanilla Paste and mix through well again.
Scrape the mixture into the prepared tin and bake for about 25 minutes. Meanwhile, combine the walnuts and NOMU Sweet Rub for the topping. After 25 minutes in the oven, quickly scatter the topping over the surface of the batter, and bake for a further 20 minutes or until a skewer inserted comes out clean and the top is crispy and golden. .
Cool before turning the cake out of the tin directly onto the serving plate to preserve all the topping.
Tip: If the top of the cake is already brown after 30 minutes of baking, loosely cover with tin foil to prevent it from darkening too much and continue baking.
