1 large ripe banana (about 100g), peeled
2/3 cup (160ml) milk or vegan milk
2 tbsp vegetable oil
1 x 150g sachet NOMU MiniMakes All Purpose Dough & Batter Mix
1/2 tsp NOMU Holiday Baking Spice
Mash the banana in a large mixing bowl, then whisk in the milk and oil. Add in the dry mix and NOMU Holiday Baking Spice and stir until just combined. Do not overmix. It’s okay if the batter is slightly lumpy.
Set aside for 10 minutes to rest for extra puffy pancakes (optional).
Heat a non-stick frying pan over medium-high heat and lightly grease a large frying pan with a little oil or melted butter. Dollop 1/4 cup portions of the batter into the hot frying pan and cook until bubbles start to appear on the surface and the underside is golden. Flip over and cook until golden and cooked through.
Serve with your favourite toppings like sliced fresh banana, roughly chopped pecans, Nutella, syrup or ice cream.
