White chocolate & cranberry cookies
A simple choc chip cookie that feels a little more grown-up with the addition of dried cranberries. Drizzle some melted white chocolate over the cooled cookies as a finishing touch.

White chocolate & cranberry cookies

Makes: 12 cookies

Ingredients

1 box NOMU minimakes Vanilla Cookie Dough Mix
60g unsalted butter, melted and cooled
1 large egg
40g cranberries, roughly chopped
50g white chocolate, chopped
40g whole almonds, chopped (optional)

Directions

Whisk together the melted butter and sugar (sachet 1), then whisk in the egg until well combined. Add the cookie mix (sachet 2) along with the chocolate and cranberries and stir to form a soft dough.

Cover and chill for 1 hour to allow the dough to firm up and for the flavours to further develop.

Preheat your oven to 160°C (fan-assisted convection) and line a baking tray with baking paper.

Portion and roll the dough into 12 even balls. Space 5cm apart on prepared trays and lightly press flat until 1cm thick.

Bake for 10-12 minutes or until the cookies are lightly golden. Allow to cool on trays for 5 minutes, then transfer to cooling racks.
