Simple syrup:
1 cup white sugar
1 cup water
Mojito (makes 1):
25 ml simple syrup
3 fresh strawberries, plus extra slices to garnish
4-5 fresh mint sprigs
½ lime
25 ml white rum
250 ml soda water
To make the simple syrup, place the sugar and water in a saucepan and stir until the sugar is dissolved. Bring the mixture to a simmer for 2 minutes, while stirring, then remove from the heat. Allow to cool, then chill in the fridge.
To assemble your mojito, muddle 25ml simple syrup, strawberries and a few mint leaves together in a chilled glass. Squeeze the juice from the lime into the glass. Add the rum, and stir well.
Fill the glass with crushed ice, and top up with soda water. Garnish with mint sprigs and extra strawberry slices.
