6 ripe but firm pears
3 cups (750ml) red wine
1 cup caster sugar
2-3 NOMU Cooks’ Collection Whole Star Anise
1 tsp NOMU Sweet Rub
Peel the pears and cut in half or leave whole. You can core them if you like, but we prefer to leave them in.
Place the wine, sugar, star anise and NOMU Sweet Rub in a medium saucepan and slowly bring to a boil. Stir the mixture every now and then to help dissolve the sugar. Simmer for around 5 minutes, then add in the pears and simmer for another 10-15 minutes or until the fruit feels soft when pierced with a small sharp knife.
Remove the pears from the heat and serve warm or chilled, drizzling each serving with some of the delicious poaching syrup.
Tip: To give these as a gift, place the hot poached fruit and syrup into beautiful sterilized jars.
