Small batch vegan waffles
Golden and crispy on the outside, and perfectly fluffy on the inside!

Small batch vegan waffles

Makes: 4-6 waffles

Ingredients

1 x 150g sachet NOMU MiniMakes All Purpose Dough & Batter Mix
200ml dairy-free milk
1 1/4 tsp apple cider vinegar or white grape vinegar
3 tbsp vegetable oil

Directions

Whisk together the milk and vinegar in a mixing bowl until combined. Leave for 5 minutes, then whisk in the oil. Dump in the contents of the dry mix sachet and stir with a whisk until just combined. Do not overmix! It’s okay if the batter is a little lumpy.

Set the batter aside to rest while you preheat your waffle maker.

Once hot, lightly grease your waffle maker with non-stick spray and dollop in 1/3 cup measures of batter (or enough to fill). Cook according to the manufacturer’s instructions until golden and crisp and keep warm in the oven until ready to serve.

Serve with any of your favourite toppings, like syrup, bananas, caramelised apples, berries, yoghurt or ice cream.
