Ricotta, orange and fig pancakes with honey
The small pockets of ricotta in these pancakes makes them extra fluffy and moreish. Serve with honey for some sweetness and any combo of your favourite fruit.

Ricotta, orange and fig pancakes with honey

Makes: 8 pancakes

Ingredients

120g soft fresh ricotta cheese
2/3 cup (160ml) milk
1 large egg
2 Tbsp (30g) unsalted butter, melted
Zest of 1/2 orange or lemon
1 x 150g sachet NOMU MiniMakes All Purpose Dough & Batter Mix
1 tbsp sugar (optional)

TO SERVE:
Fresh figs
Honey
Yoghurt, double thick cream or ice cream

Directions

Crumble the ricotta into a large bowl, then whisk in the milk, egg, melted butter and zest. You’re not aiming for a smooth mixture – there should be small clumps of ricotta throughout. Add in the dry mix and sugar (if using) and stir until just combined. Do not overmix!

Set the batter aside for 15 minutes to rest for extra fluffy pancakes (optional).

Heat a non-stick frying pan over medium-high heat and lightly grease with oil. Once hot, dollop 1/4 cup portions of the batter into the frying pan and cook until bubbles start to appear on the surface and the underside is golden. Flip over and cook until golden and cooked through.

Stack and serve with a drizzle of honey, fresh figs and a dollop of double thick cream, yoghurt or ice cream.
