RASPBERRY CORDIAL
A bright and vibrant refreshment for spring picnics. Top up with soda water, ginger beer or even cold brewed tea for a tasty raspberry iced tea.

RASPBERRY CORDIAL

Makes: 250ml cordial

Ingredients

350g raspberries (fresh or frozen)
3 pumps NOMU Vanilla Paste
2 tbsp freshly squeezed lemon juice
5 tbsp agave syrup, or more to taste

TO SERVE:
750ml soda water or sparkling water
Ice cubes
1/2 lemon, sliced
Fresh mint

Directions

Place the raspberries, Vanilla Paste, lemon juice and agave syrup in a medium-sized saucepan over low heat. Simmer for 15-20 minutes until the raspberries are cooked and form a syrupy mixture. Remove from the heat, strain through a sieve and set the strained liquid aside to cool.

Keep in the fridge until needed.

Pour the cordial into a large jug, top up with soda water and lots of ice! Add some more lemon juice, agave or sugar to taste if necessary. Finally add a few slices of lemon and sprigs of mint. Stir and enjoy!

Tips:
1. You can replace the agave syrup with the same amount of granulated sugar or sweeten to taste.
2. Instead of soda water you can try lemonade, ginger ale or even ginger beer – just remember to decrease the agave syrup!
3. To make raspberry iced tea, make a pitcher of your favourite tea, leave to cool then add raspberry cordial to taste and lots of ice to chill.
4. You can also freeze the cordial in an ice tray and add cubes to your morning smoothie for a deliciously fresh raspberry taste.
