1/2 cup hot water
1 tsp NOMU Concentrated Liquid Vegetable STOCK
6 shallots, peeled and halved
1 bunch baby carrots
1 bunch turnips, halved
1 bunch beetroots, halved
4 sweet potatoes
5 tbsp NOMU Extra Virgin Olive Oil
3 tbsp honey
1 tsp NOMU One for All Grinder
A few grindings NOMU Sea Salt
Preheat your oven to 180°C.
Place the water and NOMU Vegetable STOCK concentrate in a jug and stir to combine. Set aside.
Rinse the vegetables and scrub off any soil. Trim the leaves off the carrots, turnips and beetroot, but leave 1 or 2 cm of the stalk intact. If your vegetables are small enough, leave them whole, otherwise slice them in half. Cut the sweet potatoes into chunks, similar in size to the beetroot and turnips.
Place all the veggies in a roasting dish. Drizzle over the Olive Oil and honey and season with NOMU One for All Grinder and Sea Salt. Pour over the vegetable stock and roast in the oven for 45 minutes to an hour or until the veggies are cooked through and nicely caramelised.
Tips: You can peel the sweet potatoes if you wish but we think that so much flavour and goodness lies in the skin.
For a delicious meal in one, you can add free-range chicken thighs to the roasting tray before adding the olive oil, honey and seasoning.
