Fudgy small batch brownie cookies

Makes: 10-12

Ingredients

1 box NOMU MiniMakes Chocolate Brownie Batter Mix
2 large eggs
150g dark chocolate, finely chopped
60g butter, cubed

Directions

Preheat the oven to 180°C and line a large baking tray with baking paper.

Place the chocolate and butter in a heatproof bowl and melt over a bain marine or in the microwave until smooth. Set aside.

Whip the eggs and sugar (sachet 1) using an electric mixer until pale and doubled in volume with a ribbon consistency, about 3-4 minutes. Add the melted chocolate mixture and mix until combined. Gently fold in the brownie mix (sachet 2) to form a thick, glossy batter.

Using a 1/4 cup ice cream scoop, dollop the batter onto the prepared tray into cookies, allowing space for spreading. Bake for 10-12 minutes and allow to cool slightly before enjoying.

 

Tip: If you need to bake the cookies in batches and the batter thickens up, it’s easier to shape into cookies using your hands rather than a cookie scoop.
