200g rolled oats
50g desiccated coconut
100g hazelnuts, roughly chopped
50g flaked almonds
75g NOMU Decadent Hot Chocolate chunks
½ tsp NOMU Sweet Rub
1 tsp NOMU Vanilla Extract
1 cup (250ml) honey
80g soft brown sugar
½ cup (125ml) vegetable oil
Preheat the oven to 130°C.
In a large mixing bowl, combine the oats, coconut, hazelnuts, almonds, NOMU Decadent Hot Chocolate Chunks, NOMU Sweet Rub and Vanilla Extract.
Place the honey, sugar and oil in a small saucepan over low to medium heat. Allow the honey to melt and the sugar to dissolve, while stirring frequently. Pour the warm honey mixture into the bowl with the combined dry ingredients. Mix together well, making sure that the chocolate, nuts and coconut are evenly distributed. The heat from the honey will melt the chocolate, making the mixture a chocolate brown colour.
Pack the mixture into a brownie tray and pat it down so that it is compact and level. Bake for 50 – 60 minutes or until the oats have darkened slightly. Cut into squares or bars while still warm and then leave to cool and firm up on a wire rack.
Tip: You can change the flavour of your muesli bar by simply substituting the chocolate and nuts with dried cranberries, raisins, dried apricots, pecan nuts, cashew nuts, orange zest…the possibilities are endless!
