Chorizo Butter Bean Tapas

Ingredients

4 slices artisan sourdough bread
2 cloves garlic
NOMU Extra Virgin Olive Oil
1 red onion, sliced
1 tbsp NOMU Spanish Rub
250g chorizo sausage, sliced
1 x 400g tin butter beans, drained
½ cup Italian parsley leaves

Directions

Char-grill the bread on both sides, rub lightly with a clove of garlic and drizzle with Olive Oil.

Heat a glug of Olive Oil in a pan and fry the onion until translucent. Add NOMU Spanish Rub and chorizo and fry for 5 minutes. Add the butter beans and fry until everything is well coated and the butter beans are heated through. Toss in the parsley leaves and stir through.

Pile generously onto each slice of char-grilled bread and serve while hot.
