CHOC-CHIP MUFFINS

Ingredients

2 cups all-purpose flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cups NOMU Baking Chocolate
1 cup white sugar
2 large eggs
1/2 cup (114 g) unsalted butter, melted
1 tbsp NOMU Vanilla Extract
1 cup (250ml) buttermilk (or full cream milk)

 

Directions

Preheat the oven to 180°C and line a muffin tray or two with muffin liners.

In a large bowl, mix together the flour, baking powder, baking soda, salt, and chocolate and set aside. Using an electric mixer, beat together the sugar and eggs for 2 minutes until light and fluffy. Add the melted butter, vanilla extract and buttermilk and mix until combined. Gently fold in the dry ingredients until a batter just comes together.

Divided the batter between the muffin liners and bake for 25 min or until a skewer comes out clean. Allow to cool on a rack before eating.

Tip: To make cappuccino muffins, add 2 NOMU Cappuccino Sachets OR mix together 2 tsp instant coffee in 1/4 cup boiling water and only add 3/4 cup buttermilk.
