CHOC-CHIP MUFFINS

Makes: 12-18 Muffins

Ingredients

2 cups all-purpose flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup (114 g) unsalted butter, melted
1 cup white sugar
2 large eggs
1 cup (250ml) buttermilk (or full cream milk)
1 tbsp NOMU Vanilla Extract
1 & 1/2 cups NOMU Baking Chocolate 

Cappuccino Muffin Variation:
Add 2 x NOMU Cappuccino Sachet OR mix together 2 tsp instant coffee in 1/4 cup boiling water and only add 3/4 cup buttermilk

 

Directions

Preheat the oven to 180°C and line a muffin tray/or two with cupcake casings.

In a large bowl, mix together the flour, baking powder, baking soda, salt, and chocolate chips and set aside. In an electric mixer, whisk together the sugar and eggs for 2 minutes until light and fluffy. Add the melted butter, vanilla extract, and milk and mix until combined. Gently fold in the dry ingredients until a batter starts to form.

Divided the batter between the muffin casings and bake for 25 min or until a skewer comes out clean. Allow to cool on a rack before eating.
