2 tbsp NOMU Extra Virgin Olive Oil
1 packet chicken pieces
8 slices of Parma ham
5 shallots, peeled and halved
1 punnet cherry tomatoes on the vine
2 cloves garlic, crushed
1 split chilli (optional)
NOMU Sea Salt and Black Pepper
1 tbsp NOMU Chicken STOCK, stirred into 250ml hot water
Preheat the oven to 180°C.
Heat a glug of Olive Oil in a pan and brown the chicken on all sides to seal but do not overcook.
Wrap each chicken piece in a slice of parma ham and place in an oven-proof dish with the shallots, tomatoes, garlic and chilli. Season with Sea Salt and Black Pepper and drizzle with a little extra Olive Oil.
Dissolve the NOMU Chicken STOCK in the hot water and pour over the chicken before placing in a hot oven for 45 minutes until the chicken is golden brown and tender.
Serve with crispy Cheat’s Roast Potatoes.
