Blueberry clafoutis
A French classic à la MiniMakes! This easy dessert is like a large baked pancake studded with berries or pitted cherries. Serve with a dusting of icing sugar and whipped cream for a deliciously light pud.

Blueberry clafoutis

Servings: 4-6

Ingredients

Small square of butter, for greasing
1 cup (150g) fresh blueberries
2 eggs
4 tbsp white sugar
1/2 x 150g sachet (75g) MiniMakes All Purpose Dough & Batter Mix 
1 cup milk
2 tbsp (30g) butter, melted and cooled
Icing sugar, to dust

Directions

Preheat the oven to 180°C and grease a 23cm ceramic pie dish with some softened butter. Tip the blueberries into the dish and shake into an even layer. 

For the batter, whisk together the eggs and sugar with whisk until foamy, then whisk in the 75g dry mix. Gradually incorporate the milk and melted butter to form a smooth, runny batter.

Pour the batter over the blueberries and bake for about 30 minutes or until golden and set with a slight wobble in the center. Do not overcook as this will result in a rubbery texture.

Generously dust with icing sugar and serve immediately with some whipped cream.

 

Tip: This recipe will also be delicious with pitted cherries or sliced strawberries.
