Vegan vanilla cake
A scrumptious vegan vanilla cake that can be baked in all shapes and forms to suit every occasion!

Vegan vanilla cake

Ingredients

1 box NOMU MiniMakes Vanilla Cake Batter Mix
1/2 cup vegan coconut yoghurt
4 tbsp (1/4 cup) dairy-free milk (we used soy)
3 tbsp vegetable oil

Directions

Preheat your oven to 180°C. Grease and line a 18cm or 20cm springform cake tin with baking paper (or choose another baking tin from the guide below*)

Whisk together the yoghurt, soy milk and oil in a mixing bowl until combined, then add the cake mix and mix to form a thick, smooth batter.

Spread the cake batter evenly into the prepared tin and bake for 25-30 minutes or until a skewer inserted into the center of the cake comes out clean.

Allow to cool completely before decorating with vegan vanilla buttercream or another one of our delicious buttercreams, frostings, spreads and drizzles.

  *Makes:
1x layer cake (20cm round tin) – bake for 25-30 min
1x tray bake (20cm square tin) – bake for 25-30 min
1x loaf (21 x 11cm loaf tin) – bake for 40-45 min
8x muffins (muffin tin) – bake for 25-30 min
12x cupcakes (muffin tin) – bake for 20-25 min
